Sure, just add the correct IP addresses/network on the other side of the VPN.

You may need to configure your firewall to allow the necessary traffic over the VPN but.

Keep in mind, scanning over a VPN will increase the scan time.

A better option would be to put a spiceworks remote collector on the other network.
