We are currently implementing a MDM tool, for corporate devices we have one that works well, however several of our employees have work emails on personal phones. We need a way of making sure we can remove this access when they leave.

Any ideas?

You can do this using remote wipe option in the MDM, or remove the employees email account for restricting further emails to that account. In order to secure the existing communication you can make use of the email security management option that comes with MDM. Definitely MDM solution for this one. Ideally you don’t want them using personal devices for business purposes. You cannot really force people to install the MDM client on their personal devices. GDPR might have problems with that, as well.

Are the work emails on their phones through Outlook or something similar? I’d assume that you can manage that from the Outlook end and restrict access if so?

We use Intune to cover corporate and personal (BYOD) devices. You can restrict access to mail to the Outlook application and then by using MAM only policies for BYOD, you can push a “retire” which removes all corporate data from a phone but doesn’t allow you to push a full factory reset.
