On the Menu Today - BBQ’d everything!
Ok so a couple of things - Apparently it’s “National Mint Julep Day”. I had literally no idea what that was, but it turns out it’s a cocktail, so not a food. More importantly, and something I also had no idea about, is that it’s National BBQ Week!! Not sure who decides these things but I wholeheartedly agree with this one.
This being the case, I’d like to mention something I feel is overlooked at a bbq, which is the humble marinated chicken. 99% of barbecues I’ve ever been to have NOT had any form of chicken on the grill. I’ve never understood why, as there’s not much better than a good bit of chicken that’s been left marinating for 24hrs and is then whacked on the barby until golden brown and crispy. Is this just a UK thing, or is it neglected the world over?
Anyway, go out and fire up the barbecue every day this week, because you know, someone on the internet told you it’s National Barbecue Week. Do it.

I think chicken scares a lot of people on the BBQ, more potential to poison someone than with a greasy burger or sausage. I have certainly been to a BBQ where the chicken came off like an armadillo - raw on the inside and crunchy on the outside.
As for the window sticker, I just need the stick man, but several copies as I’ve just bought my third car…

I’m guessing the car with the kids parked 2nd, since the couple with the pile of cash wouldn’t put the driver door that close to the other car (or intentionally park next to a vehicle with that many kids on board). Then the kids dinged up the other person’s car and drove away without leaving a note!
I loooove bbq chicken! It’s not just a UK thing, it’s not done often enough in my part of the US either.

Most people don’t like to bbq chicken because it is very easy to screw up. I find it hard to find someone that can cook chicken on the grill and not overcook it. Also depending on the party you go to, the person may not want to be cooking for a long time. If you want a nicely cooked chicken it will take much longer than burgers and brats. Chicken is also known for being the flavorless meat. While it is true in some regard, getting a nice marinade and letting it chill for 24 to 48 hours can really make a difference. But if I had the choice on what to cook for a bbq I usually swing for the pork side of things. Nothings beats a good pork rub and smoking it all day long. I also started to perfect a reverse sear on my charcoal grill so my steaks have been coming out phenomenal. As mentioned above you have a much larger leeway when it comes to pork and beef in regards to not getting people sick. This also may be a factor in what people decide to serve to the masses.

I think chicken is just neglected for the most part because a lot of people don’t know how to properly cook it on the grill. It’s hard to mess up sausage or burgers. A lot of cookouts that I have gone to, the person in charge of the grill tends to throw everything over high heat and over cooks everything. Sometimes I’ll go over and talk about cooking over indirect heat but for the most part, it goes right over their head. Cooking over high heat is good to get that nice sear and carmelization but then the meat should be moved to indirect heat to finish cooking, or vice versa, and you should use a meat thermometer to ensure proper temps.

Regarding BBQ Week, I feel a little clarity is needed…here in Texas, we’re big on differentiating between BBQ and Grilling. Wonder which the founder meant,. Either is awesome though, including said grilled chicken.

You can get a BBQ as low as 150 degrees? Who knew! No man I know has ever used a BBQ that cold. It’s not anywhere near ready until it resembles a small sun.
Burnt on the outside, dangerous in the middle. That’s also why we don’t cook much chicken on there.
