You may need to define “unsupported processor” ??
If you are not talking about obsolete CPUs, it would be very very hard to buy any PC or lappy with “unsupported processor” within the past 5 years (or even 10 years).

Using a CPU not officially supported wont typically cause issues, but you may in the future (if not already) be blocked from downloading updates as your CPU is not on the supported list - at which point your system is vulnerable.

What you write is the favorite justification of the Microsoft sales people, but technically, the justification is complete nonsense.
The only real risk is that if you run into problems, Microsoft support will turn you down.
On the other hand, who calls Microsoft Support voluntarily? 
In terms of sustainability, we IT professionals should definitely not support Microsoft with this nonsense.

But here we find ourselves discussing if an IT professional should run an OS on unsupported kit. I get that the person in question will likely be responsible for their own device, I’m just ensuring all information is provided - whether or not they call support.
Microsoft have published multiple times about restricting of updates for non-supported hardware, if the OP is happy with that, then they do so with all the information.
