Currently any software deleted from a computer is not being removed from inventory. I have followed the instructions on a how-to http://community.spiceworks.com/how_to/420-troubleshooting-spiceworks-inventory-inconsistencies and the issue is still happening.
To troubleshoot I have uninstalled Office, Google and AutoCAD and made sure the registry was clean and still had them show up in inventory.
Any suggestions would be helpful.

We are running version 7.5.00057. I just upgraded yesterday to see if it would fix the problem.

I’m not able to reproduce that here. I verified a piece of software installed on a machine was present in the Spiceworks software list, I then uninstalled that software from said machine, rebooted it, did a re-scan in Spiceworks, and that software entry is now no longer present in Spiceworks’ inventory.
Is this happening for all software on all of your machines?

It looks like when we did a migration from one Server to another some of our machines were not properly scanning. I removed the devices from the system and did a scan and the inventory seem to be updating,
