If you are asking for help, your topic isnt going to get you a lot of attention.
If you are upgrading SQL, why 2014 and not 2016 or 2017?
If you do have a specific question, please state it, as I dont see one, only that you are telling us you are part way through an upgrade

Why Hello “I’m Rob”,
If you are looking for help I would like to know what you want help with. If you are looking for confirmation that you are doing the right thing, then the server should work fine for what you are asking of it. The RAID1 Mirror is the minimum anyone should do and the back up solution should work ok. Why are you not going with SQL 2016? If I was putting in an upgraded SQL Server I would go with a more recent version and SQL 2016 has a good record and plenty of support available for years to come.
As a matter of fact I am in process of upgrading my SQL Server to 2016 now but I am asking much more of my system. Just remember as you ask a computer to do more, it is going to get slower at what it does. You have a one server solution, so what is your backup if the server dies? Have you tested your backup solution in a disaster recovery scenario?

Thanks for the reply! The point of sale vendor has only tested the 2014 and only has certification from Microsoft through the 2014. (I asked them the same question)
I am contemplating a complete backup server but do not have one yet.
