Here is the situation:

We are migrating from one tenant to another tenant.

O365 tenant to 0365 tenant migration.

we use AD-on premise.

I cannot find a lot of information regarding DirSync, when it needs to be stopped, what the possible issues can be, ETC.

Has anyone had much experience with this? and any pointers / advice you can offer?

You can refer to the following article about directory synchronization in Office 365.

After DirSync is disabled, the new updates occurred on the local AD cannot be synchronized to Office 365 and any more. However, the existing synchronized users will be kept.

We spend the majority of the weekend discussing concerns with dirsync and in the end just decided to migrate over to Azure AD Connect.
