When I try to lock my pc, the Windows key is continuously being registered, preventing me from logging me back in as it believes I am entering in key combinations.
I have tried Windows update and it is not patching the issue.
Does anyone have any suggestions?

Sounds like it’s just a sticky key. Have you tried using a different keyboard?
Yes. I’ve tried switching the keyboard out, still getting the same error. The only way I can get my PC back working is if I was to restart, the problem goes away which leads me to believe it is a logical issue and not a physical one.

From what I’ve found so far, it seems to be a Windows glitch. There’s some other troubleshooting and workarounds in the below threads I’ve found; try some of these out to see if they fix the issue, or will suffice until MS fixes the glitch. One of the things suggested (that I completely forgot about) is to check your Sticky Keys settings. It’s possible there’s an issue with Sticky Keys that is causing this, so that’s another thing you can try disabling.
