I am going to be setting up a Spiceworks remote collector in one of our branches but I would like to set it up if possible where our Central server only pulls the information from the remote site once a week at a certain time. Any help that can be given would be greatly appreciated.

Simple enough, when you set up each scan you can specify exactly how often each one scans and at what time.

Under Scan Settings just remove the tick from all but the day you wish a scan to take place etc.
